Ingredients:
1 1/2 pounds (600g) yellow potatoes, peeled and diced
1 c heavy whipping cream
3/4 c grated Parmesan cheese
1 tbsp olive oil or butter
1/2 c (120ml) chicken broth
4 ounces (120g) cream cheese, softened
1 tbsp Italian seasoning
1 medium onion, minced
Sea salt and fresh cracked black pepper
6 cloves garlic, minced
4–5 pork loin chops, boneless
1 tsp crushed red chili pepper flakes, optional
2 c mushrooms, chopped
Directions:
Lay the potatoes on the bottom of the slow cooker and arrange them in a single layer. Season with pepper.
Place a saucepan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the garlic, then sauté until aromatic.
Add the cream cheese, chicken broth, and heavy cream. Stir until well blended.
Reduce the heat to low, then simmer the mixture for 10 minutes or until the texture becomes thick.
Add the Parmesan cheese and stir until well blended. Allow it to melt. Season with Italian seasoning. Add more cream if the texture of the sauce is too dry.
Meanwhile, place a skillet on the stove and turn the heat to medium-high.
Add the pork chops, then sear each side for a few minutes until they turn golden brown. Sprinkle salt to season.
Place the pork chops into the slow cooker over the potatoes.
In the empty skillet, add the onion and mushrooms. Sauté until soft. Make sure to scrape the bottom of the skillet to get the browned bits.
Transfer the content of the skillet into the skillet over the meat and potatoes.
Pour the sauce on top of the ingredients in the slow cooker.
Cover and seal the slow cooker, then cook everything for 3 to 4 hours on a high setting or 6 to 8 hours on a low setting.
Sprinkle freshly chopped parsley, red chili pepper flakes, and grated Parmesan cheese over each serving to garnish.
