This ultimately flavorful Mexican Rice Casserole is perfect for a quick and easy dinner. Packed with beef, rice, corn, and lots of taco flavour that your whole family will love and enjoy! Melt in your mouth goodness just like that of your favourite restaurant-style Mexican rice. A hearty casserole that is ready in thirty minutes or less! This sure would be a great addition to your weekly menu, especially for busy days.
Ingredients
1 lb ground beef
1 small onion, diced
salt & pepper, to taste
2 tbsp. Taco seasoning
1 tsp. garlic powder
1 cup long-grain white rice, SEE NOTE
1 1/2 cups beef broth
1 15 oz. can corn, drained
8 oz. tomato sauce
1/2 cup salsa
1 cup shredded cheese
HOW TO MAKE ONE POT MEXICAN RICE CASSEROLE
Step 1: In a large skillet, cook the ground beef seasoned with salt and pepper over medium-high heat until brown. When done, drain any excess grease.
Step 2: Place the pan back into the stove. Sprinkle the beef with garlic powder followed by taco seasoning.
Step 3: Add the rice into the pan along with the broth, corn, tomato sauce, and salsa. Stir well.
Step 4: Bring to a boil and cover the pan. Adjust the heat to low and continue to simmer for about 18 to 20 minutes or until the rice is tender.
Step 5: Sprinkle the cheese on top and cover again. Allow the cheese to melt for about 2 to 3 minutes.
Note:
For this recipe, I use long-grain rice but you can use instant rice instead. Remember that when using instant rice you only need to simmer the mixture for around 5 to 7 minutes to soften the rice.
