I enjoy great soup like a weekend meal. Hearty soups are satisfying & simple and with tons of healthy ingredients and vegetables. Soup is the best meal for cold weather or a delicious weekend dinner. We usually serve this delicious hamburger soup in a savory broth with ground beef, potatoes, and a variety of vegetables. The perfect choice for a quick dinner that the whole family loves. I find myself sometimes with a pound of ground beef, with no idea what to do of it. When I turn to hamburgers, it can often be so — it’s delicious, simple, and you can adapt it to anything you have around the house with ingredients.
Ingredients:
1 pound lean ground beef
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
(6) cubes beef bouillon
5 cups of water
1 (8 ounces) can tomato sauce
1 (16 ounces) can diced tomatoes
1 tsp salt
1 (10 ounces) package frozen corn kernels
1 tsp dried basil
3 tbsp ketchup
Directions:
Brown hamburger over medium flame, in a medium skillet. Drain the fat.
In a large stockpot, add and combine beef, carrots, celery, onions, broth, water, tomato sauce, chopped tomatoes, salt, corn, basil, and ketchup. Take to boil, and reduce heat, and simmer for 1 1/2 hours or more.
Notes:
As the soup is simmering, I prepare a quickly chopped salad and slice a loaf of french bread for a full meal (almost always eaten with Homemade Garlic Butter). This soup is good for lunches all week long if you are lucky enough to have leftovers but even better if it falls perfectly. In my small baggie holder, I prop up a freezer bag and complete each baggie with one section. Before or in the morning, I take it out of the freezer and microwave for a perfect meal, or when you need a fast lunch. (And sprinkle a bit of cheese before serving sometimes).
