This is the ultimate dinner that my family always wants! This Mac and Cheese Meatloaf Casserole is loaded with incredible flavors that you will surely love. A must-try recipe that you will surely enjoy preparing!
Ingredients:
2 Eggs
3 c macaroni noodles
2 c milk
1 tablespoon garlic powder
1 tablespoon onion powder
4 c shredded mozzarella and cheddar cheese blend
30 Ritz Crackers
2 ounces Lipton onion soup mix
1 c ketchup
10.5 ounces condensed cheddar cheese soup
1 c Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
2 pounds lean ground beef
1 teaspoon salt
1 teaspoon pepper
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
In a mixing bowl, add BBQ sauce and ketchup. Stir until blended.
In another mixing bowl, add the ground beef.
In a large resealable bag, add the Ritz crackers and crush them with a rolling pin.
Transfer the crushed crackers into the bowl with the ground beef.
Add eggs, onion soup mix, and half of the BBQ ketchup mixture over the ground beef. Mix everything with your clean hands until well incorporated.
Apply cooking spray to a 9×13-inch baking dish.
Transfer the meatloaf into the prepared baking dish, then press it to the sides and bottom.
Add the rest of the BBQ ketchup mixture over the meatloaf and spread it evenly.
Place it inside the preheated oven and bake for about 30 minutes.
Meanwhile, refer to the directions provided on the package of the macaroni on how to cook it. Drain.
In a large mixing bowl, add cheddar soup and milk. Stir until well blended.
Add onion powder, salt, pepper, and garlic powder. Stir until well blended.
Add the cooked macaroni, then toss until well coated with the sauce.
Sprinkle 2 cups of shredded cheese, then stir until well mixed.
Remove the meatloaf from the oven, then spread the macaroni mixture on top.
Sprinkle the rest of the shredded cheese over the macaroni mixture.
Bake for another 20 minutes or until the top turns golden brown.
Remove from the oven and allow it to rest for a few minutes at room temperature to incorporate all the flavors.
