Take that boring cauliflower to the next level with this spectacular recipe! This Crispy Cheddar Cauliflower will surely give you the satisfaction of a cheesy treat! Ingredients:
1/4 c freshly grated Parmesan
1 tbsp chopped fresh basil
1/3 c panko breadcrumbs
2 tbsp unsalted butter
One 8 oz. block of white Cheddar cheese, (cut into 1/2-inch logs (about 20 pieces))
1 head cauliflower (about 2 pounds), trimmed off the base
Kosher salt
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a large pot with water on the stove and turn the heat to high. Add a bit of salt and allow the water to boil.
Add the trimmed cauliflower into the boiling water, then blanch for about 8 to 10 minutes or until soft.
Transfer the cauliflower onto a clean plate to cool.
Place a small skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the breadcrumbs and 1/2 tsp salt, then toast for 3 minutes or until golden brown. Remove from the heat and allow it to cool.
Add basil and Parmesan cheese, then stir until well blended.
Make a small space between each cauliflower floret, then add cheddar cheese to it.
Top each cauliflower floret with the toasted breadcrumbs.
Add the Crispy Cheddar Cauliflower into a small baking dish.
Place it inside the preheated oven and bake for about 20 minutes or until they turn golden brown.
Remove from the oven.
Serve and enjoy!
