This was by far the best Spinach recipe I have ever tried! Oh, man, I’m telling you, you are so in for a treat! Enjoy!
Ingredients:
3 tablespoons unsalted butter
1 large yellow onion finely diced
1 clove garlic minced
1/4 c all-purpose flour
2 1/2 c milk
2 teaspoons kosher salt
1/8 teaspoon nutmeg
5 10 ounces boxes spinach chopped, defrosted
1/2 c Parmesan cheese grated
1/2 teaspoon pepper
1/2 c Monterey Jack cheese or Gruyere cheese, shredded
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Apply cooking spray in a 2-quart casserole dish.
Step 3: Put a large skillet on the stove and turn the heat to medium.
Step 4: Add butter and allow it to melt.
Step 5: Add the onions and sauté for about 3 minutes or until translucent.
Step 6: Add the garlic and sauté for 1 more minute until aromatic.
Step 7: Add flour, stir and cook for 1 more minute.
Step 8: Add nutmeg, milk, and salt. Stir until well mixed.
Step 9: Allow the mixture to boil, then turn the heat down immediately to low and simmer for 10 minutes. Make sure to stir from time to time.
Step 10: Remove most of the water from the spinach by squeezing it.
Step 11: Put the squeezed spinach into the sauce. Stir until well mixed. Add more seasonings of need.
Step 12: Move everything into the prepared baking dish.
Step 13: Sprinkle a generous amount of cheese on top.
Step 14: Place the baking dish inside the preheated oven and bake for 30 minutes or until the cheese has melted and turns golden brown.
Step 15: Remove from the oven.
Step 16: Serve and enjoy!
