INGREDIENTS
4 tbsp butter
1 white onion, diced
4 cloves garlic, minced
1 ½ pounds chicken breasts, cubed
1 tsp dried thyme
2 ½ c. chicken broth
½ c. heavy cream
1 c. long grain white rice (not quick cooking)
½ c. Parmesan cheese, freshly grated
½ tsp dried rosemary, crumbled
Fresh parsley, chopped, for serving
Kosher salt and freshly ground black pepper, to taste
How to make One-Pot Garlic Parmesan Chicken and Rice
Step 1: Melt the butter in a large skillet over medium-high heat. Once the butter has melted, add the onion to the skillet and cook for about 2 to 3 minutes or until starting to soften.
Step 2: To the skillet, add the chicken and season with salt, pepper, thyme, and rosemary. Continue to cook for another 5 minutes or until all sides are browned. Next, add the garlic and cook for another minute.
Step 3: Pour in the chicken broth and add the rice. Stir well and bring everything to a boil. Put the lid on and adjust the heat to medium-low.
Step 4: Allow the mixture to simmer for about 15 to 20 minutes or until the rice is tender.
Step 5: When done, take the skillet off the heat. Add the cream and Parmesan. Stir well.
Step 6: Serve the garlic, Parmesan chicken, and rice immediately with extra Parmesan and some chopped parsley. Enjoy!
