Ingredients:
BROWNIES:
2 tbsp lemon juice
2 tbsp lemon zest
1/2 c unsalted butter, softened
2 Eggs, large
1/4 tsp sea salt
3/4 c granulated sugar
3/4 c flour
GLAZE:
8 tsp lemon zest
1 c icing sugar
4 tbsp lemon juice
Directions:
For the Brownies:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray or spread butter in an 8×8-inch baking dish.
Get the juice, then zest the lemons.
Add sugar, flour, salt, and butter into a mixing bowl. Beat everything until well blended.
In another mixing bowl, add lemon juice, lemon zest, and eggs. Whisk until well blended.
Transfer the flour mixture into the bowl with the egg mixture, then beat for a few minutes until well blended.
Transfer the batter into the prepared baking dish and spread it evenly.
Place it inside the preheated oven and bake for about 25 minutes or until a toothpick comes out clean after inserting it in the centre.
Remove from the oven and let it cool completely at room temperature.
For the Glaze:
In a mixing bowl, add lemon juice, powdered sugar, and lemon zest. Stir until well blended.
Add the glaze on top of the cooled cake and spread it evenly.
Allow the glaze to set for a few minutes.
Slice the cake into small servings.
Serve and enjoy!
