Ingredients:
1 1/2 lb of chicken breast tenders
1 yellow bell pepper sliced into 1/4-inch slices
1 red bell pepper sliced into 1/4-inch slices
1 orange bell pepper sliced into 1/4-inch slices
1 small red onion sliced into 1/4-inch slices
1 1/2 tbsp of extra virgin olive oil
1 tsp of kosher salt
several turns of freshly ground pepper
2 tsp of chilli powder
1/2 tsp of garlic powder
1/2 tsp of onion powder
1/2 tsp of ground cumin
1/2 tsp of smoked paprika
lime
fresh cilantro for garnish
tortillas warmed
Directions:
Step 1: Prepare the oven and preheat 218 degrees C or 425 degrees F.
Step 2: In a large mixing bowl, add bell pepper, onion, chicken tenders, spices, olive oil, salt, and pepper. Stir until well combined.
Step 3: Apply cooking spray in a baking sheet.
Step 4: Transfer the chicken mixture into the prepared baking sheet and spread it evenly.
Step 5: Place it inside the preheated oven and bake for about 20 minutes.
Step 6: Broil for 2 more minutes or until done.
Step 7: Remove from the oven and squeeze lime juice on top, then sprinkle fresh cilantro as well.
Step 8: Serve with tortillas. Enjoy!
