Ingredients:
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup cocoa powder
1 1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 large Eggs
1 teaspoon salt
1 cup buttermilk
1 cup of vegetable oil
1 1/2 teaspoon vanilla extract
1 cup cold brewed coffee (instant will due in a pinch)
PEANUT BUTTER FROSTING:
1/2 cup butter, softened
1 cup creamy peanut butter
3 tablespoon milk, or more as needed
2 cups confectioners’ sugar
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 300 degrees F.
Step 2: Apply cooking spray in a 13×9-inch baking pan.
Step 3: In a large mixing bowl, add the flour, cocoa, sugar, baking soda, and baking powder. Whisk until well mixed.
Step 4: In another mixing bowl, add the eggs and beat it using an electric mixer until well mixed.
Step 5: Add oil, vanilla and coffee. Beat until well mixed.
Step 6: Add the flour mixture and buttermilk into the egg mixture. Beat until well combined.
Step 7: Transfer the batter into the prepared baking dish. Spread it evenly on the bottom.
Step 8: Place inside the preheated oven and bake for 1 hour or until a toothpick comes out clean after inserting in it in the middle.
Step 9: Remove from the oven and let it sit on a wire rack to cool at room temperature.
Step 10: In a medium mixing bowl, add the peanut butter and butter. Beat using an electric mixer until well combined.
Step 11: Add powdered sugar and milk. Beat until well combined.
Step 12: Spread the frosting over the cooled cake.
Step 13: Serve and enjoy!
