Easy, simple, and insanely delicious! These three words best describe my experience with these Four Ingredient Porcupine Meatballs! In less than an hour, these bad boys will surely make you very satisfied! Give this recipe a try now! This recipe yields 25 servings so everyone gets a piece. I can’t think of any reason why you shouldn’t give this one a try. Enjoy!
Ingredients:
1 Egg
2 1/4 cups of water
1 lb. ground beef
1 (6.8 oz) box Beef Rice A Roni
Directions:
Add 1 pound of ground beef into a large bowl.
Add 1 box of Beef Rice and A Roni and set aside the seasoning packet for later use.
Crack an egg into the bowl, then use your clean hands to mix everything until well blended.
Form 25 small meatballs out of the mixture.
Place a large deep skillet on the stove and turn the heat to medium-high.
Add the meatballs, then sear each side for a few minutes until they turn brown.
Mix the seasoning packet with 2 1/4 cups of water.
Pour the mixture into the skillet, then stir until well blended.
Turn the heat down to medium-low, then simmer everything for about 30 to 40 minutes or until done.
Serve right away and enjoy!
Notes:
To Freeze and Bake:
Cook the meatballs, then transfer them into a deep 9×9-inch baking pan.
Cover the dish with foil, then place it inside the freezer.
When serving, add 1/2 cup of beef broth on top of the meatballs.
Place it inside the oven preheated over 175 degrees C or 350 degrees F and bake for about 20 minutes or until done.
Remove from the oven.
Serve and enjoy!
