Ingredients:
For the Tots:
1 Egg
3/4 c breadcrumbs
4 ounces grated cheddar cheese or other meltable cheese (about 1/2 c grated)
1/2 medium onion, finely chopped
1/2 tsp salt
3 small yellow squashes or zucchini – about 1-1.5-pound yellow squash
Ground black pepper, to taste
Optional: 2 tbsp – 1/4 c finely minced parsley leaves
1/2 tsp garlic powder
For the Yogurt Dip:
1/4 tsp garlic powder (or use 1 small clove of garlic, minced)
¼ tsp salt, or to taste
2 tsp lemon juice (from about 1/2 lemon, or to taste)
¼ tsp pepper, or to taste
⅓ c unsweetened Greek yogurt
1 tsp finely minced parsley (or dill, or 1/2 tsp dried parsley or dill)
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Line parchment paper onto a large baking sheet. You can also brush it with olive oil.
Grate the squash in the food processor. Transfer into a colander.
Sprinkle 1/2 tsp of salt over the grated squash and allow it to sit for a couple of minutes.
Squeeze the grated squash to remove the excess water.
In a large bowl, add all the ingredients for the tots. Stir everything until thick. Check if you need to add more breadcrumbs.
Make small tots out of the mixture about 2 tablespoons each.
Lay the tots onto the prepared baking sheet and arrange them in a single layer. Make space in each tot.
Place the baking sheet in the preheated oven and bake the tots for 25 minutes or until they turn golden brown.
Remove the tots from the oven and allow them to rest for a few minutes at room temperature.
In a mixing bowl, add the ingredients for the dip. Stir everything until well blended.
Serve the tots with the dip. Enjoy!
