Oh, my! Try this perfect Orange Cake and prepare to be amazed. Enjoy!
Ingredients:
3 Eggs
1 1/8 cup (250g) sugar
1 3/4 cup (275g) all-purpose flour
2 1/2 teaspoons baking powder (or 1 packet Italian Pane Degli Angeli vanilla baking powder)
1/3 cup (100g) butter, softened
1/3 cup (100g) plain Greek yoghurt
1 large organic orange, about (300g), washed and cut into pieces (with the rind, but remove the seeds)
(if using plain baking powder add 1 teaspoon vanilla extract)
Glaze
juice of one organic orange
1/3 cup (100g) sugar
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in an 8-inch springform pan, then line it with parchment paper.
Step 3: In a large mixing bowl, add eggs and sugar. Beat until well mixed.
Step 4: In a mixing bowl, add the baking powder and flour. Whisk until well mixed.
Step 5: Sprinkle the flour mixture into the egg mixture.
Step 6: Add the softened butter and beat until well mixed.
Step 7: Add the yoghurt and stir until well mixed.
Step 8: Place the orange into a food processor, then pulse until processed into a puree.
Step 9: Pour the pureed orange into the cake mixture and beat until well blended.
Step 10: Transfer the batter into the prepared pan and spread it evenly.
Step 11: Place it inside the preheated oven and bake for 1 hour or until a toothpick comes out clean after inserting it in the middle.
Step 12: Remove from the oven and let it cool at room temperature for 15 minutes.
To Make the Orange Glaze:
Step 1: Place a saucepan on the stove and turn the heat to low.
Step 2: Add orange juice and sugar. Stir until well mixed.
Step 3: Simmer for about 5 minutes or until the texture becomes thick.
Step 4: Remove from the oven and spread the glaze over the cooled cake.
Step 5: Let it cool for a few more minutes.
Step 6: Slice, serve, and enjoy!
