This Tuscan Style Chicken and Potatoes is a truly filling dish loaded with crispy chicken and potatoes with spinach, sun-dried tomatoes, and bacon chip smothered in a luscious creamy Parmesan sauce. Always a hit during dinner and an outstanding meal to serve when you are expecting company.
Ingredients
6 Chicken Thighs
2 c. Potatoes red or creamers cut up in small chunks
2 tablespoons Oil for frying
3 cloves Garlic minced
1.5 c. Heavy cream
1/3 c. Sun-Dried Tomatoes cut into strips
2 c. Spinach
1/2 c. Parmesan Cheese grated
2 slices bacon chopped
Salt & pepper to taste
1 tsp sweet paprika
Cooking Spray
Parsley for garnish
How to make Tuscan Style Chicken and Potatoes
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Cut the potatoes and cook in a pot of salted boiling water for about 15 minutes. Drain when done and set aside.
Step 3: In a cast-iron skillet or another heavy pan, heat the cooking oil. Meanwhile, season both sides of the chicken with salt, pepper, and sweet paprika. Into the hot oil, sear the chicken for about 3 to 4 minutes per side until brown. When done, set the chicken aside.
Step 4: Drain the grease from the skillet but leave a tbsp of fat. Add the garlic and cook for about a minute. Pour in the heavy cream and continue to cook for another 5 minutes until the cream has thickened. Add in the spinach and dried tomatoes and toss.
Step 5: Turn the heat off, then add in the Parmesan cheese. Mix well until melted and well incorporated into the sauce. As needed, season with salt and pepper.
Step 6: Generously grease a large enough casserole dish with cooking spray. To the bottom of the casserole dish, add the potatoes, then pour the sauce over and add the chicken on top. Place in the preheated oven and bake for about 40 to 45 minutes until the chicken is cooked through with internal temperature reached to 165 degrees F and the potatoes are easily pierced with a fork.
Step 7: In the meantime, to a clean skillet, cut the bacon up and cook until crispy and golden brown.
Step 8: Take the casserole out of the oven when done and sprinkle the bacon on top. Garnish with parsley and enjoy immediately.
