Ingredients:
2 tbsp minced garlic (about 6 medium-size garlic)
½- ¾ cup celery, diced (about 1 medium rib celery)
½ lb (225 grams) hammock or smoked turkey chopped
1 lb (450g) of red kidney beans
7-8 c chicken stock or water
2 -3 bay leaves
1 tsp thyme
1 lb (450 grams) andouille sausage (sliced)
2 tsp creole spice Homemade
1 Large onion, diced
1 large bell pepper, diced
1 sprig of fresh thyme
3-4 c cooked white rice
2 tsp Paprika
2 green onions, diced (for garnish)
1 tsp cayenne pepper (optional)
Salt and fresh ground pepper to taste
¼- 1/3 c vegetable oil (or canola)
Directions:
Clean and rinse the dry beans. Make sure to remove any dirt.
Place the beans in a large pot, then add enough water to submerge them. Let them soak overnight, then drain.
Put a Dutch oven and turn the heat to medium.
Add oil and allow it to become hot.
Slice the turkey and sausage into small portions.
Add the sausage and turkey slices into the pot, then cook for 5 minutes or until they turn brown. Make sure to stir from time to time to prevent them from burning.
Add thyme, garlic, bay leaves, celery, bell peppers, and onions. Sauté until soft and aromatic.
Add the Creole seasoning, cayenne, and paprika. Stir until well blended. Cook for 5 more minutes.
Add the rinsed beans and broth, then stir until well blended. Let the mixture boil, then turn the heat down to low and simmer for another 1 1/2 hours or until done.
Remove and discard the thyme sprig and bay leaves.
Serve immediately over rice and enjoy!
Notes:
Add more stock if the texture is too dry.
Add more seasonings if needed. Taste first before adding anything.
