It’s snack time! These Peaches and Cream Scones are my all-time favourite treats! I learned to make these about 3 years ago, and I’ve been making them ever since! Ingredients:
For the Scones
2 c all-purpose flour, plus a little extra for flouring your work surface
1 tbsp baking powder
3 tbsp granulated sugar
½ tsp salt
5 tbsp cold unsalted butter, cut into ¼-inch cubes
1 c peaches, peeled and cut into ½” dice (approximately 1 ½ peach)
¾ c light cream
For the Glaze
1 ½ c confectioner’s sugar
2–3 tbsp light cream
¼ tsp vanilla
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Line with parchment paper a baking sheet.
Add baking powder, 2 cups of flour, salt, and sugar into a mixing bowl. Stir until well mixed.
Add the butter and stir until well combined.
Add the peaches and toss until well coated with the mixture.
Add light cream and stir until just mixed. It should resemble a soft dough.
Sprinkle flour on a flat surface, then place the dough on it.
Form the dough into a rectangular shape. Use your fingers for this step.
Slice the dough into 6 even squares, then slice each square into two, diagonally.
Arrange the squares onto the prepared baking sheet.
Place them inside the preheated oven and bake for about 13 minutes or until done. Make sure to flip each in the middle of the baking time to cook the other sides.
Remove from the oven and allow the scones to cool for a few minutes at room temperature.
Serve and enjoy!
