This classic casserole is a must! Super delicious and loaded with simple ingredients ready in under thirty-five minutes. My favourite menu rotation and one of my go-to for when I want something easy and quick. Incredibly comforting and is a great choice for the busiest days!
Ingredients
2 c. chopped cooked chicken (rotisserie chicken works well)
3 c. crushed tortilla chips or Dorito Nacho Cheese chips
15 ounces black beans drained and rinsed
1 10-ounces can Rotel tomatoes undrained
2 cups shredded jack cheese
2 c. shredded medium cheddar cheese
21 ounces cream of chicken soup 2 (10.5 ounces) cans
1 tomato diced
1 tsp ground cumin
Jalapeños, optional
1 bunch cilantro rinsed and chopped
How to make Mexican Chicken Casserole
Step 1: Prepare the oven. Using non-stick cooking spray, grease a 13 x 9-inch casserole dish.
Step 2: Lightly crush the tortilla chips. Across the bottom of the baking dish, sprinkle about a cup of crushed tortilla chips. On top, layer the diced chicken and black beans.
Step 3: Into the cream of chicken soup. Stir a tsp of cumin. Gently spread this across the top of the chicken and beans with a spatula, then add the canned tomatoes on top.
Step 4: On the tomato layer, evenly sprinkle the cheese and top with the rest of the crushed chips. Place the casserole in the preheated oven and bake for about 25 to 30 minutes until hot and bubbly and the cheese has completely melted.
Step 5: When done, remove from the oven and serve garnished with cilantro and chopped tomatoes. Enjoy right away with a slice of fresh jalapenos.
Tips:
Make sure not to drain the Rotel tomatoes before you add them to the casserole.
Feel free to use regular tortilla chips with Doritos.
For added flavour, combine 4 ounces of diced chiles into the soup/cumin mixture.
You can make this casserole ahead except by adding the tortilla chips on top. Using plastic wrap, cover the casserole and store it in the fridge. To bake, unwrap the casserole and sprinkle with chips. Then, bake until hot and bubbly.
