These little treats are extremely flavorful! Small portions of meatloaf that are easy to eat. I’m sure you and your kids are going to them! Try this recipe now. Enjoy!
Ingredients:
1 large Egg, beaten
1 tsp Worcestershire sauce
1 tbsp extra-virgin olive oil
1 medium clove garlic, finely minced
1 c ketchup, divided
1/2 c soft, fine breadcrumbs
1 ½ lb. ground beef chuck
½ c finely chopped onion
½ tsp dried oregano
½ tsp dried thyme
¾ tsp kosher salt
½ tsp freshly ground black pepper
Cooking spray, or melted butter, for greasing pan
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to a muffin pan.
Place a skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add onion into the hot skillet, then sauté for 3 minutes or until soft.
Add the minced garlic, then sauté for a minute or until aromatic.
In a mixing bowl, add the beaten egg, oregano, ground beef, breadcrumbs, 1/2 cup of ketchup, thyme, Worcestershire sauce, salt, and pepper. Stir until well combined.
Transfer the sauteed veggies into the bowl with the meat mixture, then stir until well mixed.
Stuff each of the prepared muffin cups with the meat mixture.
Place them inside the preheated oven and bake for 20 minutes.
Add ketchup over each muffin, then bake for another 5 to 10 minutes or until done.
Remove from the oven and allow them to rest for a few minutes at room temperature.
Serve and enjoy!
Notes:
Make sure to finely chop the garlic and onion for the meatloaf to stay intact.
Feel free to add carrots and bell peppers to this recipe.
Adding cheese also makes the meatloaf more flavorful!
You can use chili sauce instead of ketchup if you want it to be a bit spicy.
