Ingredients:
6 tbsp butter (room temperature or use olive oil)
1 1/2 c chicken broth
1 (4 lbs.) whole chicken
Stuff Chicken (optional):
1 lemon (halved)
6 cloves garlic
4 sprigs of fresh rosemary
4 sprigs of fresh thyme
3 bay leaves
4 sprigs of fresh oregano
Buttery Mixture for Broiling:
1 tbsp garlic powder
1 tbsp onion powder
1/2 tbsp paprika
1 tsp thyme powder
1/2 c butter (unsalted)
1 tsp salt
1/4 tsp ground black pepper
1 tsp dried oregano
Gravy (optional):
3 tbsp all-purpose flour
remaining cooking liquid
4 tbsp unsalted butter
Directions:
To Stuff the Chicken:
Stuff the whole chicken with lemon, fresh thyme, garlic cloves, bay leaves, oregano, and rosemary.
Rub the whole chicken with butter and seasonings. Make sure to coat it well.
To Cook the Chicken:
Put a trivet inside the Instant Pot.
Pour the chicken broth, then put the chicken with the breast part facing down.
Cover and seal the Instant Pot. Cook for about 24 minutes on a high setting.
Do a natural release and let the pressure out.
To Broil:
In a mixing bowl, add melted butter, onion powder, garlic powder, oregano, paprika, thyme powder, salt, and pepper. Stir until well blended.
Line with aluminium foil on a baking sheet and drizzle olive oil on it.
Remove the whole chicken from the Instant Pot, then transfer it onto the prepared baking sheet.
Brush the whole chicken with the butter mixture.
Broil for 5 to 8 minutes or until the skin turns crispy and brown.
Remove from the oven and let it rest for a few minutes at room temperature.
To Make the Gravy:
Add the rest of the liquid seasoning into the pot.
Press the “Sauté” button, then add the butter and allow it to melt.
Add flour, then whisk and cook for a minute.
Add more seasonings if needed.
Serve the chicken with the delicious gravy. Enjoy!
