Ingredients:
INSTANT POT CINNAMON ROLL INGREDIENTS
FOR THE DOUGH:
1/2 c (113g) butter, cold
3 Eggs
2 c (480g) hot milk
7 c flour
1/2 c warm water
2 tablespoons dry active yeast
1/3 c sugar
1 tablespoon oil for the Instant Pot
1 tablespoon salt
FOR THE FILLING:
1 c packed brown sugar
1 tablespoon cinnamon
3 tablespoons melted butter
FOR THE CREAM CHEESE ICING:
8 tablespoons unsalted butter softened
2 c powdered sugar
1 tablespoon vanilla extract
8 ounces (225g) cream cheese room temp
Directions:
For the Dough:
Place a small pot on the stove and turn the heat to medium.
Add milk and allow it to boil. Remove from the stove.
Add in the cold butter and stir until well blended. Let it rest for a few minutes at room temperature.
In a separate mixing bowl, add yeast, 1 tablespoon sugar, and warm water. Stir until just mixed and let it rise for 10 minutes.
Transfer the yeast mixture and milk mixture into the bowl of a stand mixer.
Add eggs, salt, and the rest of the sugar. Beat until well blended.
Add 3 cups of flour and beat until well combined.
Add the rest of the flour and beat until the texture becomes sticky.
Drizzle a bit of oil into the Instant Pot and spread it evenly.
Put the dough into the prepared pot, then roll until well coated with oil.
Press the “Yogurt” button on the Instant Pot. Cover and proof the dough for about 20 minutes.
Remove the cover, then knead the dough. Proof for 10 more minutes.
Sprinkle flour onto a flat surface, then place the dough on it. Roll the dough into a 1/2-inch-thick rectangle.
Brush melted butter over the dough.
Meanwhile, add cinnamon and brown sugar into a mixing bowl. Stir until well mixed.
Sprinkle the mixture over the dough.
Roll the dough, then slice it into 1-inch pieces. Let them rest for another 15 minutes.
Place the rolls inside the oven and bake until golden brown for about 20 minutes at 190 degrees C or 375 degrees F.
For the Cream Cheese Icing:
In a mixing bowl, add butter and cream cheese. Beat until well blended.
Add vanilla extract and powdered sugar. Beat until well blended. Add more milk if needed.
Remove the rolls from the oven, then pour the icing over and spread it evenly.
