This recipe is not only very delicious, but it is also effortless to make. In just about 10 minutes, with a very minimal set of ingredients, you will surely have the best pancakes ever! Ingredients:
1/2 cup self-rising buttermilk cornmeal
1/2 cup self-rising flour
1 Egg
1 Tablespoon vegetable oil
1/2 cup milk, maybe a little more if needed
Directions:
Step 1: In a large mixing bowl, add the flour, and cornmeal. Whisk until well combined.
Step 2: Add the egg and teaspoon of oil. Beat until just mixed.
Step 3: Gradually add the milk and beat continuously the texture resembles a pancake batter.
Step 4: Place a frying pan on the stove and turn the heat to medium-high.
Step 5: Add 2 tablespoons of oil and allow it to become hot.
Step 6: Add 1/4 cup of the batter and cook each side for 1 to 3 minutes or until done.
Step 7: Remove from the pan to a clean plate lined with paper towels. Allow the excess oil to drain. Repeat the process to the rest of the pancake batter.
Step 8: Serve and enjoy!
Note:
While you cook the rest of the batter, you can place the cooked pancakes inside the oven preheated to 150 degrees C or 300 degrees F to keep them warm.
