This moist and creamy Oatmeal Cake is our favourite dessert to wrap up every meal. Incredibly easy to throw together with only a few simple ingredients. I have made this many times and brought this to potlucks, office gatherings, even serve this to parties and this decadent cake never fails to impress. A straight 5-star!
This is an amazing cake recipe. Some found this overly sweet but you can easily adjust the ingredients to meet your desired tone. As for me, this is just perfect! And this easy recipe is the perfect base for other desserts. A huge point if you are only starting baking.
Ingredients
CAKE:
1 cup quick oatmeal
1 1/2 cups boiling water
1 cup granulated sugar
1 cup brown sugar
1/2 cup oleo (butter or margarine)
2 medium Eggs
1 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
FROSTING:
2 tablespoons soft oleo (butter)
1 cup brown sugar
1/2 cup milk or cream
1 teaspoon vanilla extract
3/4 cup flaked coconut
3/4 cup chopped pecans
How to make Grandma’s Oatmeal Cake
Step 1: Whisk the oatmeal in boiling water until the lumps are gone, then allow it to cool in the fridge. If desired, you can use leftover oatmeal at room temperature.
Step 2: In a mixing bowl, add the sugars, oleo, and eggs, then beat well until combined. Add in the flour, cinnamon, soda, and salt, mixing until well blended before stirring in the cooled oatmeal.
Step 3: In a greased 9 x 13-inch cake pan, pour the mixture. Place in 350 degrees preheated oven and bake for about 40 to 50 minutes.
To make the Frosting:
Step 4: In the meantime, mix the butter, sugar, and milk in a small saucepan. Bring the mixture to a boil, then remove from the heat before stirring in the vanilla, coconut, and pecans.
Step 5: Spread the frosting on the still-warm cake.
