Ingredients:
For the Pork
1/2 pound ground pork, beef, chicken, or crumbled tofu
1 tablespoon chopped garlic (approximately 3 cloves garlic)
1 teaspoon chopped ginger
1 tablespoon soy sauce
1 tablespoon Shaoxing wine, dry sherry, or rice wine
pinch of black pepper
1 tablespoon cooking oil
2 ounces Chinese preserved mustard green, chopped (You can omit this or substitute with any pickled mustard green or kimchi – after washing)
For the Sauce
1 teaspoon chopped garlic (approximately 2 cloves garlic)
2 tablespoons tahini (preferred made with toasted sesame seeds) or peanut butter https://amzn.to/332nJVk
1 1/2 tablespoons soy sauce
1 teaspoon dark soy sauce
3 tablespoons chilli oil with chilli flakes
1 to 3 teaspoons toasted and grinned Sichuan peppercorns
1/2 tbsp sugar
For Assemble
2 portions fresh Egg noodles or spaghetti
a handful of yu choy, bok choy, napa cabbage, or any green leafy vegetables
3 tablespoons sauce (approximately half of the sauce)
1/4 c hot chicken or veggie broth
green onion chopped
crushed peanuts or sesame seeds for garnish
Directions:
Step 1: In a large mixing bowl, add all the ingredients for the pork aside from the mustard green and cooking oil. Allow the pork to marinate for at least 10 minutes.
Step 2: In another large mixing bowl, add all the ingredients for the sauce. Stir until well mixed.
Step 3: Place a wok on the stove and turn the heat to high.
Step 4: Add 1 tablespoon of oil and allow it to become hot while swirling it all over the wok.
Step 5: Stir fry the pork mixture for 3 minutes or until brown.
Step 6: Add the mustard green and cook for about a minute. Remove everything from the heat.
Step 7: Refer to the directions provided on the package on how to cook them.
Step 8: Cook the green veggies for a minute in the same water where you cooked the noodles.
Step 9: Spoon the sauce on the bottom of a bowl and top it with the noodles.
Step 10: Place the veggies and pork mixture over the noodles.
Step 11: Add the chicken broth and sprinkle crushed peanuts and green onions on top.
Step 12: Serve and enjoy!
