Ingredients:
1 cup butter, softened (2 sticks)
6 ounces cream cheese, softened
6 Eggs
2 1/4 cups sugar
1 – 2 teaspoons vanilla extract or for more of a coconut flavour, add coconut extract
2 1/4 cups cake flour
1/8 cup coconut milk or coconut cream – optional
FROSTING – I DOUBLE THIS
1/4 cup butter, softened
4 ounces cream cheese, softened
1/2 teaspoon vanilla or coconut extract is good as well
1 1/2 cups confectioners’ sugar
1/2 cup coconut- for toasting and sprinkling on top of the frosting
Directions:
Step 1: Prepare the oven and preheat to 350 degrees F or 175 degrees C.
Step 2: Apply cooking spray in a 9×13-inch pan.
Step 3: In a mixing bowl, add cream cheese, butter, and sugar. Beat until well mixed.
Step 4: Add the eggs gradually and beat every addition.
Step 5: Add flour, vanilla, and milk. Beat until well mixed.
Step 6: Transfer the batter into the greased pan and spread it evenly.
Step 7: Place the pan inside the preheated oven and bake for about 40 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 8: Remove from the oven and allow it to cool at room temperature.
To Make the Frosting:
Step 1: In a mixing bowl, add the cheese, butter, sugar, and vanilla. Beat until well mixed.
Step 2: Add toasted coconut and stir until well mixed.
Step 3: Spread the frosting over the cooled cake.
Step 4: Serve and enjoy!
