This Amish oatmeal pie recipe is a classic. It’s understandable that you might wonder why oatmeal is in a pie. This is an incredible and surprising substitution that dates back to the 1800s. Pecans and other nuts were expensive and scarce during the Civil War. It was necessary to find new ways to create delicious desserts. They did, and it’s a good thing.
Serves 8 1 Hour 15 Minutes
Ingredients:
1 ¼ cups brown sugar packed
¾ cup old-fashioned rolled oatmeal
¾ cup milk
½ cup sugar
3 large eggs, beaten
3 tablespoons unsalted butter at room temperature
1 ½ teaspoons vanilla extract
¼ teaspoon salt
1 unbaked pie shell
vanilla ice cream, optional
Directions:
Preheat oven to 350o F. Line a pie plate with an unbaked crust.
Mix brown sugar, oats, and sugar in a large bowl. Next, add milk, beaten eggs and butter to the bowl.
Continue to stir until everything is well combined.
Place mixture in a pie shell and bake.
Bake for 45-50 minutes or until the pie is golden brown.
Allow cooling in the oven for 10-15 minutes before serving with whipped cream or ice cream.
