I love this Cheesy Beef Mexican Rice not only because this is incredibly easy to make, but the cheesy goodness of this dish is to die for! Ingredients
1 small onion, chopped
1 lb ground beef
1 tsp garlic powder
2 tbsp taco seasoning
1 (15 ounces) can whole kernel corn
½ c. water
1 c. beef broth
½ c. salsa
8 ounces tomato sauce
1 c. shredded cheddar cheese
1 c. long-grain rice, uncooked
1 tsp salt
1 tsp black pepper
How to make Cheesy Beef Mexican Rice
Step 1: Cook the ground beef in a large skillet over medium heat for about 4 to 5 minutes, breaking up the clumps as the meat cooks. When done, drain any excess grease and set the cooked beef aside.
Step 2: Add the onions to the same pan and cook for about 2 to 3 minutes, stirring.
Step 3: Place the ground beef back in the pan and add the taco seasoning, salt, pepper, and garlic powder. Mix well.
Step 4: Next, add the tomato sauce along with the salsa, beef stock, water, and rice. Stir again until blended.
Step 5: Let the mixture boil over medium heat before adding in the whole-kernel corn.
Step 6: Adjust the heat to low once the mixture is boiling and let everything simmer for about 15 to 18 minutes, stirring often to prevent the rice from sticking.
Step 7: Take the pan off the heat when done, and sprinkle the cheddar cheese on top. Allow the dish to stand for about 5 minutes.
Step 8: Serve and enjoy!
