This Broccoli Cheddar Chicken Pot Pie is mind-blowing! Super easy to make, delicious, and filled with protein and veggies. This pie is the perfect comforting dinner excellent for everyone!
INGREDIENTS
2 tbsp butter
2 pie crusts, unbaked
3 c. cooked chicken, chopped or shredded
½ white onion, chopped
2 tbsp all-purpose flour
1 c. whole milk
¼ tsp ground mustard
4 ounces cream cheese, softened
2 c. sharp cheddar cheese, grated and divided
2 cloves garlic, minced
1 ½ c. frozen broccoli florets
1 egg
Kosher salt and freshly ground black pepper, to taste
How to make Broccoli Cheddar Chicken Pot Pie
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using nonstick spray or butter, grease a 9-inch pie dish and line it with one of the pie crusts, then set aside.
Step 2: Melt the butter in a large skillet over medium-high heat. Once the butter has melted, add the onion to the skillet and cook for about 2 minutes until the onion starts to soften. Then, add the garlic and continue to cook for another minute.
Step 3: To the skillet, whisk in the flour and cook for a minute more. Slowly whisk in the milk, then cream cheese. Cook further until the cream cheese has melted and the mixture has thickened, stirring often. Then, add the ground mustard, salt, and pepper.
Step 4: Turn the heat off and whisk in 1 ½ cups of the cheddar cheese until melted. Add the broccoli and chicken. Stir well.
Step 5: Into the pie shell, pour the mixture, and top with the rest of the cheese. On top, place the second pie crust. Seal by crimping the edges and create four slits in the middle of the pie.
Step 6: Mix the egg with 1 tbsp water and brush this on top of the crust.
Step 7: Place in the preheated oven and bake for about 40 to 45 minutes. When done, take the pie out of the oven and let it rest for about 10 minutes.
Step 8: Serve and enjoy!
