1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup butter cubed
2 cloves of garlic, minced
1/2 cup all-purpose flour
2 teaspoons sugar
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon pepper
4 cups chicken broth
1 pack (10 ounces), frozen green peas
4 cups cubed chicken
dumplings:
2 cups biscuit/baking mix
2 teaspoons dried basil
2/3 cup 2% milk
Directions
Pre-heat oven to 350°F Sauté onion and celery until tender in butter in a large saucepan. Add garlic; cook 1 minute longer.
Blend flour, sugar, salt and basil until well combined. Slowly add broth. Bring to a boil. Stir for 1 minute, or until the broth becomes thickened. Reduce heat. Cook the peas for 5 minutes, stirring continuously. Add the chicken. Place in a greased 13×9-in. baking dish.
Mix the basil and baking mix in a small bowl to make dumplings. Mix in milk until well combined. Drop tablespoonfuls of the mixture into small mounds and sprinkle over the chicken mixture.
Bake, uncovered, 30 minutes. Bake covered for 10 minutes or until a toothpick is inserted into a dumpling comes clean.
