This baked Caprese Chicken is an amazing chicken dish that is packed with flavors from the sweet balsamic oven-roasted tomatoes and tons of melted mozzarella cheese. This 30-minute chicken dish will make your mouth water! Enjoy this baked Caprese Chicken with angel hair pasta or vegetables for a simple yet impressive weeknight dinner perfect for everyone!
INGREDIENTS
2 tbsp Olive Oil
3-4 Large Chicken Breasts (or 5-6 thinly sliced chicken breasts)
¾ tsp Dried Basil
¾ tsp Dried Oregano
2 tbsp Brown Sugar
¼ tsp Garlic Powder
⅓ c. Red Onion, diced
3 tbsp Balsamic Vinegar
1 ½ c. Grated Mozzarella Cheese or 4-8 Slices of Fresh Mozzarella
1 ½ c. Fresh Tomatoes such as Campari or Grape, halved or quartered
1 tsp Salt
½ tsp Pepper
Garnish optional:
Fresh Italian Parsley or Basil diced
How to make Baked Caprese Chicken
Step 1: Prepare the oven. Preheat it to 425 degrees.
Step 2: In a baking dish or cast-iron skillet, place the chicken breasts. Drizzle with olive oil and sprinkle with basil, oregano, garlic powder, salt, and pepper.
Step 3: All around the chicken, place the halved tomatoes and diced onion. Then, drizzle the balsamic vinegar on top, followed by the brown sugar.
Step 4: Place in the preheated oven and bake for about 18 to 24 minutes. Note that the baking time depends on the thickness of the chicken breast.
Step 5: Remove from the oven when done and sprinkle the cooked chicken with mozzarella cheese. Return to the oven and place on the top rack. Set the oven to broil and cook for about 5 minutes or until the cheese has melted.
Step 6: Before serving, garnish the baked Caprese Chicken with some fresh basil or Italian parsley. Enjoy right away and do not forget to drizzle the balsamic sauce and tomatoes all over the chicken!
