Ingredients:
4 strips bacon cut into small pieces
2 large chicken breasts cut into bite-size pieces
1/2 teaspoon garlic powder
Salt & pepper to taste
Flour for dredging
2 cloves garlic minced
1/4 c chicken broth
1 c heavy/whipping cream
5 ounces tomatoes chopped small
1/2 c freshly grated parmesan cheese
8 ounces uncooked penne pasta
Directions:
Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and cook until al dente. Drain and rinse with cold water to stop the cooking process.
Slice the bacon into small pieces, then add them into a skillet. Turn the heat to medium-high and cook until crispy.
Remove the crispy bacon from the skillet onto a clean plate lined with paper liners to drain any excess grease.
Slice the chicken into small pieces, then season them with garlic powder, salt, and pepper. Toss them with flour until well coated.
In the same skillet, add the chicken and sear each side for 3 minutes or until golden brown.
Remove the chicken pieces from the skillet onto a clean plate.
In the same skillet, add the garlic and saute until aromatic.
Add the chicken broth and stir until well mixed. Make sure to scrape the bottom of the skillet to get the brown bits.
Add the tomatoes and cream. Stir until well mixed. Let it simmer for about 2 minutes.
Put the bacon and chicken back to the skillet and stir until well coated with the delicious sauce.
Add the Parmesan cheese and stir until well blended.
Add the cooked pasta and toss until well coated with the delicious sauce.
Sprinkle salt and pepper on top. You can add more cheese as well.
