Ingredients:
4 ounces salmon fillets, skinless
2 sheets puff pastry
2 cups frozen spinach, thawed and squeezed to discard any excess water
egg for egg wash
Sauce:
2 tbsp Dijon mustard
2 tbsp mayonnaise
1/2 lemon, squeezed
2 tsp honey
2 tbsp chives, chopped
3 tbsp dill, chopped
3 tbsp parsley, chopped
2 tbsp tarragon, chopped
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Unroll the sheets of puff pastry slice each into two.
Step 3: Top each slice of pastry with a piece of salmon.
Step 4: Top each salmon piece with the sauce.
Step 5: Top the sauce with about half a cup of spinach.
Step 6: Brush the sides of the pastry with the egg wash, then fold them.
Step 7: Brush each top with egg wash, then arrange them into a baking sheet.
Step 8: Place the baking sheet inside the preheated oven and bake for about 20 minutes or until golden brown.
Step 9: Add all the ingredients for the sauce into a mixing bowl. Stir until well mixed.
