This was my Grandma’s recipe that she gave me. I am so grateful to her for a lot of things. She taught me so much about life and especially, a lot of great recipes! This Chicken Pot Pie is just one of them. This has always been my favourite growing up. I remember every Sunday, I would go to her house because I know that she will cook this! One day, she taught me how to make it. I was around 10 years old at that time. Now that I am an adult, I still make this because it reminds me of all the great memories of my Grams. Ingredients:
3 cups cooked chicken, diced
10 ounces package frozen mixed vegetables
1 can(s) cream of celery soup undiluted
1 cup chicken broth
1/4 teaspoon pepper
1 cup self-rising flour
1 cup milk
1/2 cup butter melted
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking spray in a 2-quart baking dish.
Arrange the veggies and chicken into the prepared baking dish.
Add broth, soup, and pepper into a mixing bowl. Stir until well mixed.
Pour the mixture on top of the chicken and spread it evenly.
Add milk, flour, and butter into a mixing bowl. Beat until well blended.
Pour the mixture over the chicken as well and spread it evenly.
Place it inside the preheated oven and bake for about 45 minutes or until done.
Remove from the oven and allow it to cool for a few minutes at room temperature.
Serve warm and enjoy!
