Scrumptious and can feed a whole family! This Chicken and Dumplings Casserole has been with my family for as long as I can remember. My grandma said to me one time that her great-grandmother even made this on her wedding night. I have made some changes to the original recipe but the taste is still the same. And on lazy nights, I always gravitate to using cooked chicken from the deli and a can of chicken broth and it still is amazing!
Ingredients
1 chicken
1 small diced onion
1 stick butter
2 cups Bisquick
2 cups milk
1 can(s) cream of chicken soup
1 tablespoon chicken broth paste(or cube)
1 teaspoon poultry seasoning
salt and pepper to taste
How to make Chicken and Dumplings Casserole
Step 1: With diced onion, salt, and pepper, boil a whole chicken. When done boiling, debone and dice the chicken, saving the chicken broth.
Step 2: Meanwhile, prepare the oven. Preheat it to 350 degrees.
Step 3: Pour a melted stick of butter into a 9 x 12-inch baking dish. Over the butter, evenly spread the chopped chicken and sprinkle with salt and pepper.
Step 4: Combine 2 cups of Bisquick, poultry seasoning, and milk until the lumps are gone. Gradually and evenly pour this over the chicken. DO NOT STIR.
Step 5: Mix 2 cups of warm broth with paste until the paste is dissolved. Using a slotted spoon, spoon the onions out of the broth (optional). Stir in the cream of chicken until the lumps are gone. Over the second layer, slowly and evenly pour the mixture. Again, DO NOT STIR the layers.
Step 6: Place in the preheated oven and bake for about 50 to 60 minutes until golden brown. When done, remove from the oven and let the casserole cool for at least 10 to 15 minutes, then serve.
