This very simple recipe will surely make your day extra special! My only advice to you is to be very generous with the amount of cheese that you are going to add. Just do it and thank me later! Ingredients:
1 lb bacon
8-oz package cream cheese
½ c grated Parmesan cheese
1 ½ c sharp cheddar cheese, shredded
1/3 c avocado mayonnaise
1 c heavy cream
½ tsp hot sauce, we used Cholula
1 tsp dry mustard
½ tsp white pepper
½ tsp garlic powder
½ tsp onion powder
½ tsp paprika
1 store-bought cooked rotisserie chicken, meat removed and chopped into bite-sized pieces
1 ½ c red onion, diced
8 oz baby Bella mushrooms, sliced
1 tbsp fresh garlic, minced
8 oz baby spinach
2 c mozzarella cheese, shredded
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Place a large skillet on the stove and turn the heat to medium.
Add the bacon slices and cook until crispy.
Remove the crispy bacon slices from the skillet onto a clean plate lined with paper towels to drain any excess grease.
Leave about 3 tbsp of bacon grease and remove the rest from the skillet.
Meanwhile, place a saucepan on the stove and turn the heat t medium.
Add Parmesan cheese, cream cheese, avocado mayonnaise, cheddar cheese, hot sauce, heavy cream, garlic powder, onion powder, mustard, paprika, salt, and pepper. Stir until well mixed.
Cover the pan and allow the mixture to simmer for a few minutes until it becomes creamy.
Crumble the cooled bacon, then toss them into the sauce.
Add the onions into the skillet with bacon grease, then saute until translucent.
Add the mushrooms and saute until soft.
Add the garlic and spinach, then saute until aromatic and wilted.
Pour the sauce and cooked chicken into the skillet, then stir until well blended.
Transfer everything into an 8×12-inch casserole dish and spread it evenly.
Sprinkle a generous amount of mozzarella cheese on top.
Place it inside the preheated oven and bake for about 20 minutes or until the cheese has melted completely.
Broil for another 2 minutes or until the top turns brown.
Remove from the oven and allow it to cool for a few minutes at room temperature.
Slice into equal pieces.
Serve and enjoy!
