Ingredients:
For Chickpea Tikka
2 c chickpeas cooked
2-3 garlic cloves finely minced
1/2″ ginger finely minced
3/4 teaspoon garam masala
1/2 teaspoon chilli powder
1 tablespoon lemon juice
1/2 tablespoon oil
salt to taste
For Tikka Masala Sauce
1 small onion cut into 8 pieces
4 medium tomatoes cut in quarters
2-3 garlic whole cloves
1/2″ ginger peeled and cut into 2-3 pieces
1/4 c raw cashews
1 teaspoon cumin powder
1 1/2 teaspoons coriander powder
2 teaspoons oil divided
1/2 teaspoon chilli powder
1 teaspoon garam masala
salt to taste
Directions:
For the Chickpea Tikka:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Add all the ingredients for the chickpea tikka into a large mixing bowl. Stir until well mixed.
Step 3: Transfer the mixture into a nonstick baking tray and spread it evenly.
Step 4: Place it inside the preheated oven and bake for about 10 minutes or until done.
For the Tikka Masala Sauce:
Step 1: Place a large pan on the stove and turn the heat to medium.
Step 2: Add 1 teaspoon of oil and allow it to become hot.
Step 3: Add ginger, garlic cloves, and onion. Sauté for about 2 minutes or until aromatic and translucent.
Step 4: Add the cashews and tomatoes. Stir and cook for 4 minutes.
Step 5: Add the coriander powder and cumin powder. Stir until well blended.
Step 6: Add a cup of water and stir until well mixed.
Step 7: Place a frying pan on the stove and turn the heat to low.
Step 8: Add the rest of the oil and allow it to become hot.
Step 9: Add the chilli powder. Stir and cook until aromatic.
Step 10: Add the tomato mixture and stir until well blended, then allow the mixture to boil.
Step 11: Add the garam masala as well as salt. Stir and simmer for about 5 minutes.
Step 12: Add the chickpeas and sprinkle cilantro on top.
Step 13: Serve and enjoy!
