Ingredients:
8 to 10 slices of streaky bacon (longer slices)
1 pound pork tenderloin (at room temperature)
1 tbsp olive oil or canola oil
1/4 tsp salt
1/2 tsp pepper
1/4 c honey or maple syrup
1 1/2 tbsp minced garlic (optional)
2 jalapeños (sliced)
Directions:
Step 1: Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Step 2: Arrange the bacon slices overlapping each other onto a flat surface.
Step 3: Apply olive oil on the pork and sprinkle salt and pepper to season.
Step 4: Put the pork over the bacon slices. You can also add the jalapenos as well.
Step 5: Wrap the bacon all over the pork tenderloin and secure it with toothpicks.
Step 6: Apply cooking spray on a roasting pan, then lay the wrapped pork on it.
Step 7: Spread honey all over the pork.
Step 8: Place the roasting pan inside the preheated oven and bake for 35 minutes or until done.
Step 9: Turn the temperature to broil, then broil the pork for another 5 minutes. Make sure to baste 2 or 3 times.
Step 10: Remove the pan from the oven and baste again.
Step 11: Cover the pan with aluminium foil and allow the pork to rest for 15 minutes.
Step 12: Slice into small cuts.
Step 13: Serve and enjoy!
