This recipe has always been a part of my family since I was a little kid. I am so glad that my Grandma taught me how to make these Sweet Potato Hash Browns because now, I get to share it with you as well! I have listed all the ingredients and directions so all you need to do is to follow them step by step and you are good to go! By the way, feel free to add more ingredients if you want. These heavenly treats are perfect to serve pretty much any time of the day! Another thing, be very generous with the amount of cheese that you are going to add. Ingredients:
3 small sweet potatoes about 1lb.
3 Eggs
1/2 c grated Parmesan
1/4 c chopped parsley
Salt & pepper to taste
Vegetable oil for frying
Directions:
Step 1: Shred the peeled potatoes and put them into a medium bowl.
Step 2: Add the Parmesan cheese, eggs, parsley, salt, and pepper. Stir until well combined.
Step 3: Place a large non-stick skillet on the stove and turn the heat to medium.
Step 4: Add vegetable oil and allow it to become hot.
Step 5: Add the potato mixture and make 1/2-inch-thick patties out of them.
Step 6: Flip each patty and cook the other side for 2 minutes or until brown.
Step 7: Serve hot and enjoy!
