Ingredients:
Crust:
1 ¼ c all-purpose flour
¼ teaspoon of sea salt
1 tablespoon granulated sugar
½ c shortening chilled
3-4 tablespoons of ice water
Chocolate Silk Pie Filling
¾ c butter softened
¼ c granulated sugar
1 c powdered sugar
4 ounces semi-sweet chocolate melted
1 teaspoon pure vanilla extract
Pinch of sea salt
3 eggs room temperature
¾ c whipping cream whipped (measured in a liquid state, then whipped)
Whipped topping
1 ¼ c whipping cream measured in a liquid state, then whipped
½ c powdered sugar
1 teaspoon pure vanilla extract
Directions:
To Make the Crust:
Step 1: In a food processor, add the sugar, flour, and salt. Pulse until well mixed.
Step 2: Add cold water and shortening, then pulse until well mixed and the texture becomes sticky.
Step 3: Transfer the dough onto a flat surface. Knead into a ball.
Step 4: Wrap the ball of dough with plastic wrap and place it inside the fridge to chill for about an hour or overnight.
Step 5: Prepare the oven and preheat to 230 degrees C or 450 degrees F.
Step 6: Roll the ball of dough onto a flat surface sprinkled with flour.
Step 7: Transfer the dough into a 9-inch pie pan and press the sides to make a crust.
Step 8: Place the pie weights over the crust.
Step 9: Place it inside the preheated oven and bake for about 10 minutes or until brown.
Step 10: Remove from the oven and allow it to cool at room temperature.
To Make the Whipped Cream Filling:
Step 1: Whip until stiff peaks form 3/4 cup of whipping cream.
Step 2: Place the whipping cream into an airtight container and place it inside the fridge.
To Make the Whipped Topping:
Step 1: In the bowl of a standing mixer, add the vanilla, powdered sugar, and 1 1/4 cups of whipping cream. Beat until the texture becomes thick.
Step 2: Beat for 1 more minute at high speed.
Step 3: Transfer the mixture into a piping bag, then place it inside the fridge to chill.
To Make the Chocolate Filling:
Step 1: Place the chocolate inside the microwave and heat it until melted completely.
Step 2: In a mixing bowl, add powdered sugar, vanilla, and butter sugar. Beat until well mixed.
Step3: Add the melted chocolate and beat for another minute or until well blended.
Step 4: Add eggs gradually and beat every addition.
Step 5: Add 3/4 cup of whipping cream and stir until well mixed.
To Assemble the French Silk Pie:
Step 1: Spread the chocolate filling on top of the pie crust.
Step 2: Place it inside the fridge to chill for about 4 hours.
