Ingredients:
For The Crust
25 chocolate sandwich cookies (286 g), crushed into crumbs
4 tablespoons unsalted butter, melted
For The Filling
24 oz (678 g) cream cheese, softened
¾ c (150 g) granulated sugar
2 c (560 g) Nutella
1 tbsp vanilla extract
½ tsp salt
¾ c (180 ml) heavy cream, room temperature
4 large eggs, at room temperature & lightly, beaten
For The Glaze
½ c (120 ml) heavy cream
1 c (280 g) Nutella
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Wrap with foil the outer bottom part of a 9-inch springform pan.
Step 3: In a mixing bowl, add the melted butter and cookie crumbs. Stir until well mixed.
Step 4: Transfer the mixture into the prepared pan press it on the bottom.
Step 5: Place it inside the preheated oven and bake for about 10 minutes or until done.
Step 6: Remove from the oven and allow it to cool at room temperature.
To Make the Filling:
Step 1: Turn the heat of the oven to 150 degrees C or 300 degrees F.
Step 2: Add the sugar and cream cheese into a large mixing bowl. Beat until well blended.
Step 3: Add vanilla, salt, and Nutella. Beat until well mixed. Make sure to scrape the sides of the bowl as well.
Step 4: Add the heavy cream gradually and beat continuously.
Step 5: Add the eggs gradually and beat every addition.
Step 6: Transfer the batter on top of the crust and spread it evenly.
Step 7: Put the pan into a roasting pan and add enough water into the roasting pan.
Step 8: Place it inside the preheated oven and bake for about an hour or until done.
Step 9: Turn the oven off and let the cheesecake sit inside for 1 more hour.
Step 10: Remove from the oven and loosen the sides by running a knife on it.
Step 11: Let the cheesecake sit at room temperature to cool completely.
Step 12: Place it inside the fridge to chill overnight.
To Make the Glaze:
Step 1: Place the cheesecake onto a wire rack.
Step 2: Place a saucepan on the stove and turn the heat to medium-low.
Step 3: Add the heavy cream. Stir and allow it to simmer, then remove the pan from the heat.
Step 4: Add the Nutella and stir until well blended.
Step 5: Spread the glaze over the cooled cheesecake.
Step 6: Place it inside the fridge to chill for about an hour.
