Ingredients:
1 tbsp butter
1 clove garlic minced or grated
1 tbsp flour
1/2 c milk
1-oz cream cheese
1/2 c shredded mozzarella cheese
1/2 c grated parmesan cheese
1/2 c Greek yoghurt
1/2 tsp crushed red pepper flakes optional
1/2 tsp pepper
1/2 c frozen chopped spinach thawed, about 5 oz
1 (8 oz) jar grilled artichoke hearts or marinated artichokes
1 chicken breast grilled and sliced thin (optional)
8 slices thick sourdough or Tuscan bread
butter for spreading
Directions:
Step 1: Place a skillet on the stove and turn the heat to medium.
Step 2: Add butter and allow it to melt.
Step 3: Add the minced garlic and sauté until aromatic.
Step 4: Add flour and whisk until the texture becomes thick.
Step 5: Add milk and stir until well blended.
Step 6: Add the Mozzarella cheese, pepper, Parmesan cheese, and cream cheese. Stir until well mixed.
Step 7: Add the Greek yoghurt and stir until well blended.
Step 8: Add the sliced spinach and artichokes. Stir until just mixed.
Step 9: Place a skillet on the stove and turn the heat to medium-low.
Step 10: Brush each bread with butter and spread the mixture over each bread.
Step 11: Cook each sandwich until crisp and golden brown.
Step 12: Serve hot and enjoy!
