Ingredients:
Dough:
300g [~2 ½ c] all-purpose flour (see notes below if using c)
175ml [¾ c] hot boiling water
pinch of salt
Filling:
½ pound (250g) green beans, chopped
16 ounces firm tofu, pressed & mashed
1 small carrot, finely chopped
a handful of chopped cilantro
2 tsp toasted sesame oil, 1 tsp salt, a few shakes of white pepper
oil for cooking
sesame seeds
chopped green onion
Directions:
Step 1: In a large mixing bowl, add the flour and salt. Whisk until well mixed.
Step 2: Create a small well in the centre of the flour mixture and add hot water. Mix with a spatula.
Step 3: Sprinkle flour on a flat surface and put the dough on it. Knead for 10 minutes.
Step 4: Cover the dough with a damp towel and allow it to rise for at least 30 minutes at room temperature.
Step 5: Discard any excess water from the tofu by wringing it into a cheesecloth bag.
Step 6: Place a small wok on the stove and turn the heat to medium.
Step 7: Add 1 teaspoon of oil and allow it to become hot.
Step 8: Add the green beans and sauté for a minute. Remove from the heat.
Step 9: Add the green beans, carrot, tofu, and seasonings into a large bowl. Stir until well combined, then divide into 10 patties.
Step 10: Divide the dough into 10 even balls.
Step 11: Flatten 1 dough and roll into 4.5 inches. Top it with 1 patty filling, then fold. Seal the sides with a little water, then sprinkle sesame seeds on top. Repeat the process to the rest of the ingredients.
Step 12: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 13: Arrange the buns on a baking sheet.
Step 14: Place the baking sheet inside the preheated oven and bake for 20 minutes or until golden brown.
