A special meal to enjoy with your loved-ones – Shrimp and pasta in a rich and flavorful garlic mozzarella cream sauce. A quick, easy meal that will ravish your taste buds and will leave you asking for more!
INGREDIENTS
8 oz (240grams) farfalle pasta
1 pound (450grams) shrimp, peeled and deveined
1 tsp onion powder
3 garlic cloves, minced
1/4 tsp salt and cracked black pepper
4 oz (120grams) chopped sun-dried tomatoes, drained from oil (reserve 2 tbsp oil)
1 c (240ml) half-and-half (or whipping cream)
1/4 c (60ml) vegetable or chicken broth
1 c shredded mozzarella (or parmesan)
1 tbsp dried basil
1 tsp crushed fennel seeds, optional
1/4 tsp red chilli pepper flakes
1/8 tsp paprika
1/2 c reserved cooked pasta water (or more)
1 tbsp grated parmesan, for garnish
How to make CREAMY GARLIC SHRIMP PASTA
Step 1: According to package directions, cook the pasta. Drain but reserve some cooked pasta for later.
Step 2: Place the shrimp in a shallow plate and sprinkle evenly with onion powder.
Step 3: In a large skillet, heat 2 tbsp of the reserved oil over medium heat. Once the oil is hot, add the shrimp in a single layer and cook both sides for a minute until pink or golden brown. Season the shrimps with salt.
Step 4: Transfer the cooked shrimps to a plate.
Step 5: In the same skillet, saute the sun-dried tomatoes and minced garlic for about a minute until the garlic is aromatic.
Step 6: To the skillet, pour in the broth and half and a half and bring to a simmer.
Step 7: Add in the shredded mozzarella and cook further over low heat until the cheese has melted and the creamy sauce forms, stirring constantly. Add a little amount of the half-and-half or the reserved pasta water if the sauce becomes too thick.
Step 8: Stir in the dried basil, crushed fennel seeds, crushed red pepper flakes, and paprika. Adjust the seasoning according to taste.
Step 9: To the sauce, add the cooked pasta. Gently reheat over medium heat.
Step 10: Add in the cooked shrimps and stir. Add a bit of half-and-half or reserved pasta water if the sauce becomes too thick. Simmer on low heat for several minutes.
Step 11: If desired, garnish with grated parmesan and enjoy this creamy garlic shrimp pasta immediately.
