A delicious combination of broccoli, ham, and mozzarella baked with eggs. This low-carb dish is perfect for the whole family, so good even your picky eaters will love this. My go-to for brunch during the weekends. A nice trick for the kids to eat their veggies.
INGREDIENTS
6 c chopped broccoli pieces, blanched about 2 minutes, then drained well
2 c diced ham
1 c grated Mozzarella
1/3 c thinly sliced green onion (optional, but good)
10 eggs, beaten well
1 teaspoon Spike Seasoning (or other all-purpose seasoning blends)
fresh-ground black pepper, to taste
HOW TO MAKE BROCCOLI, HAM, AND MOZZARELLA BAKED WITH EGGS
Step 1: Prepare the oven. Preheat it to 375 degrees F or 190 degrees C.
Step 2: Use nonstick cooking spray to grease a 9 x 12-inch casserole dish.
Step 3: Bring to a boil a medium-sized pot with water.
Step 4: Ready the ham (diced), green onions (sliced), and mozzarella cheese(measured).
Step 5: Once the water boils, add the broccoli and cook for just 2 minutes. Drain well.
Step 6: In the casserole dish, layer the ham, mozzarella, and green onions.
Step 7: Sprinkle with spike seasoning and fresh-ground black pepper.
Step 8: And pour the beaten egg on top.
Step 9: Stir the mixture with a fork until just coated with egg.
Step 10: Place inside the preheated oven and bake for about 35 to 45 minutes or until set and lightly brown.
Step 11: If desired, serve with sour cream. Enjoy!
Note:
Store in the fridge for up to a week. When ready to serve, reheat in the microwave.
