These delicious treats never fail to satisfy my cravings all the time! Packed with outstanding flavors, these Bacon Wrapped Armadillo Eggs are perfect for snacks with your loved ones! Each bite explodes in your mouth and you would want to constantly eat them! I have listed all the ingredients and directions so all you need to do is to follow them step by step, and you are good to go!
Ingredients:
12 slices bacon
4 ounces cheddar cheese (shredded)
1 c BBQ Sauce
1 lb. pork sausage
6 jalapenos (stems, core, and seeds removed)
2 tbsp Homemade Sweet Rub
4 ounces cream cheese (softened)
Directions:
Prepare the smoker and preheat to 250 degrees F. (I highly suggest you use maple, hickory, or oak hardwood.)
Add 1 tbsp of sweet BBQ seasoning, cream cheese, and cheddar cheese into a mixing bowl. Stir everything until well combined.
Stuff each of the prepared jalapenos with some of the cream cheese mixture. Press it to the bottom of each jalapeno.
Coat each prepared jalapeno with ⅙ of the pork sausage. Make sure to cover it completely.
Cover each with two bacon slices, then use toothpicks to secure each Bacon-wrapped Armadillo Egg.
Put them over the smoker, then cover them with the lid. Cook the Bacon-wrapped Armadillo Egg for about 2 hours or until done. (You can brush each Bacon-wrapped Armadillo Egg with BBQ sauce if you like.)
Transfer them onto a serving plate.
Serve right away. Enjoy!

You can brush these armadillo eggs with BBQ sauce if you want.
You can also cook these in the oven if you do not have a smoker.
You can broil these Bacon-wrapped Armadillo Eggs in the oven for about 2 minutes to make the bacon crispier.
