Ingredients:
1/2 c canola oil
3/4 c sugar + 2 tbsp
2 large Eggs
1 1/2 c flour
1 tsp vanilla extract
3 c Granny Smith Apples, diced (about 4 apples)
2 tbsp pulp-free orange juice
1/2 tbsp baking powder
1/2 tbsp ground cinnamon
1/2 tsp kosher salt
Directions:
In a mixing bowl, add cinnamon, apple slices, and 2 tablespoons of sugar. Stir until well mixed.
In a large mixing bowl, add baking powder, salt, and flour. Whisk until well incorporated.
In another bowl, add eggs, oil, sugar, vanilla, and orange juice. Whisk until well blended.
Transfer the flour mixture slowly into the bowl with the egg mixture, then whisk every addition until the texture becomes smooth.
Apply cooking spray to the bottom of a springform pan.
Add 1/2 of the batter into the prepared pan and spread it evenly.
Add 1/2 of the apple slices over the batter. Repeat the process with the rest of the batter and apple slices.
Cover the entire pan with aluminium foil.
In the insert of the Instant Pot, add 1 cup of water and put the trivet.
Place the pan on the trivet. Cover and seal the Instant Pot.
Press the “Manual” button and cook for an hour.
Do a natural release, then remove the cover.
Remove the trivet and the foil cover of the pan.
Let the cake rest at room temperature completely.
Sprinkle cinnamon and powdered sugar over the cake.
Serve and enjoy!
