These aren’t enchiladas that have been adorned with fancy flavors or extra ingredients. These are simple enchiladas with a short ingredient list and cheesiness. They are delicious, but they don’t make them any less good. These are the enchiladas that you can turn to for something simple, easy, and cheesy. They will make your whole family happy.

INGREDIENTS
Ground beef 1 lb
1/2 white onion diced
3 tablespoons taco seasoning
1/4 cup water
Warm corn tortillas 10-14
2 cups enchilada sauce
3 cups grated Cheddar cheese
For serving, sour cream
Fresh cilantro for your next meal
PREPARATION
Preheat oven to 375°F
Brown the ground beef and onions in a large skillet on medium heat until they are no longer pink. Season beef with taco seasoning. Drain excess fat. Stir in 1/4 cup of water, and heat until the water is reduced completely. Set aside.
Place 1/2 cup of the enchilada paste in the bottom 9×13 inch baking dish.
Place some ground beef and some cheddar in the middle of each tortilla. Roll tightly.
Place the enchiladas seam-side down in the baking dish. Spread the enchilada sauce on top of the tortillas. Add the remaining cheese to top.
Bake for 20 minutes or until cheese is melted and sauce is bubbly. Serve with sour cream, cilantro, and enjoy!
