Ingredients
1 1/2 lbs chicken breast, cut into bite-size chunks
1/3 c. canola or vegetable oil
Seasoned Rice Flour
Spicy Soy-Sherry Sauce
8 oz. Cashews
Rice Flour Batter
6 green onions, cut into 1/4-inch pieces
SEASONED RICE FLOUR:
1/8 tsp Paprika
3/4 c. Rice Flour
1/8 tsp Baking Powder
1/8 tsp Ground Black Pepper
1/4 tsp Kosher Salt
RICE FLOUR BATTER:
1/4 c. All-Purpose Flour
1 1/2 c. Rice Flour
1 1/2 c. Ice Water
1/4 tsp Kosher Salt
1/4 tsp Ground Black Pepper
SPICY SOY-SHERRY SAUCE:
1/4 c. Sherry Wine
2 tbsp red wine vinegar
1/4 c. soy sauce
1/4 c. granulated sugar
1 tbsp Sriracha sauce
2 oz. fresh garlic, minced
1/4 tsp Crushed Red Chili Flakes
1 c. Hoisin sauce
How to make Cheesecake Factory’s Spicy Cashew Chicken
Step 1: In a bowl, mix the Seasoned Rice Flour ingredients (paprika, rice flour, baking powder, ground black pepper, and kosher salt) until well combined.
Step 2: In another bowl over ice, place the batter ingredients (all-purpose flour, rice flour, ice water, kosher salt, and ground black pepper). Mix well and keep cold.
Step 3: Whisk the sauce ingredients (Sherry wine, red wine vinegar, soy sauce, granulated sugar, Sriracha sauce, minced fresh garlic, red chilli flakes, and Hoisin sauce) until well blended.
Step 4: Dredge the chicken into the seasoned flour. Then, into a large bowl with the chicken, pour the batter. Toss carefully until the chicken is well coated.
Step 5: In a large pan or wok, heat the canola oil over medium-high heat. Once the oil is shimmering, add the chicken pieces into the pan and sear until both sides are browned and crispy. Make sure to break apart any pieces that stuck to each other.
Step 6: Into the pan, add the sauce and cashews followed by the green onions. Toss and continue to cook for additional 30 seconds to a minute to thicken the sauce.
Step 7: Serve garnished with some sesame seeds, parsley, and crushed cashews. Enjoy!
