I have never tried anything like this before and I am so impressed by the outcome of this recipe. Oh, man, you will surely love it for sure! The texture of the chicken is what I love the most. It is so juicy! Combined with delicious sauce, this will be the best dish to serve today. Enjoy!
Ingredients:
2 to 3 medium-sized zucchini, diced
3 pounds (1 1/2 kg.) Chicken breast
2 tsp Cumin Powder
1/4 c (60ml.) chicken stock
2 tsp Oregano
8 Garlic cloves, minced
1 tbsp smoked Paprika
1/2 tsp Onion Powder
1/4 c (60ml) Olive Oil
1/2 tsp Chili Flakes
1/4 c (60ml) lemon juice, more for serving
Salt and fresh cracked black pepper
Directions:
Add cumin, paprika, garlic, chilli flakes, olive oil, onion powder, chicken stock, and lemon juice into a large mixing bowl. Stir until well blended.
Add the chicken breasts into the bowl with the mixture and toss until well coated.
Cover the bowl with plastic wrap, then place it inside the fridge. Marinate the chicken for about 30 minutes or so.
Remove the chicken breasts from the marinade and shake off any drippings. Set aside the marinade.
Place a skillet on the stove and turn the heat to medium-low.
Add 1 tbsp of oil and allow it to become hot.
Add the chicken and cook each side for about 15 minutes or until done. Remove from the skillet onto a clean plate.
In the same skillet, add the zucchini slices, red pepper flakes, salt, and pepper. Saute for about 3 minutes or until soft.
Pour in the reserved marinade and simmer for another 3 minutes. Allow the sauce to reduce its volume.
Distribute the zucchini and sauce onto plates or into serving bowls.
Top each bowl/plate with a sliced chicken breast.
Serve with lemon slices. Enjoy!
