Easy to throw together, quick, and the perfect casserole for even the pickiest eaters. This Taco Bake Casserole is easily modifiable. You can add in your favourites and it still is going to be delicious! If desired, you can top it with fresh tomatoes, lettuce, salsa, sour cream, or whatever your heart desire. Ingredients
cooking spray (such as Pam®)
1 ½ lbs ground beef
1 c. chopped onion
½ c. water
1 (1-oz.) package taco seasoning mix
1 (10-oz.) can refried beans (optional)
½ c. salsa
1 (6-oz.) can slice black olives (optional)
1 (4-oz.) can dice green chiles
15 taco shells, broken up, or more to taste
2 c. shredded Cheddar cheese
How to make Weeknight Taco Bake Casserole
Step 1: Prepare the oven. Preheat it to 375 degrees F or 190 degrees C. Using cooking spray, grease a 9 x 13-inch baking pan.
Step 2: In a skillet, cook the ground beef and onions over medium heat for about 7 to 10 minutes until the beef has browned. Drain the excess grease once done. Pour in the water, then add in the taco seasoning. Stir and cook for another 2 minutes until thick. Make sure to stir often. Then, stir in the refried beans, salsa, olives, and green chiles and continue to cook for 3 to 4 minutes over low heat until warmed through.
Step 3: Into the bottom of the prepared baking dish, place half of the taco shells. On top, pour half of the ground mixture and sprinkle with half of the cheddar cheese. Do the same with the rest of the taco shells, ground beef mixture, and cheddar cheese.
Step 4: Place the dish in the preheated oven and bake for about 20 to 25 minutes until the cheese has melted and bubbly.
