Ingredients:
1 cup crushed ginger snaps
3/4 cup crushed graham crackers
4 ounces cream cheese softened
2 1/2 cups melted white chocolate, divided
1/2 cup pumpkin puree
1 teaspoon pumpkin pie spice
Pinch kosher salt
1 tablespoon coconut oil
Directions:
Step 1: Line with parchment paper a large baking sheet.
Step 2: Add the graham cracker crumbs and ginger snaps into a small mixing bowl. Stir until well mixed. Reserve about 2 tablespoons for later use.
Step 3: Add cream cheese into a large mixing bowl. Beat until the texture becomes fluffy.
Step 4: Add the pumpkin puree, pumpkin pie spice, chocolate, and salt, beat until well mixed, then add the cookie crumbs. Stir until well blended.
Step 5: Form small balls out of the mixture. Place them inside the freezer for at least 40 minutes until hard.
Step 6: In a small mixing bowl, add the rest of the melted chocolate and coconut oil. Stir until well mixed.
Step 7: Add the balls into the mixture and coat them well.
Step 8: Arrange the balls back to the baking sheet.
Step 9: Sprinkle the reserved cookie crumbs on top.
Step 10: Place them inside the fridge to chill for about an hour.
